Oven-Baked Parmesan Chicken

 
Makes 12 servings. (Enough for dinner tomorrow night too!)
 
Ingredients:

1/4 cups Reduced calorie salad dressing or lowfat mayonaise with 1/2 tsp mustard

1/4 cup Parmesan cheese, grated

1/4 cup dry bread crumbs

1/4 Ground pepper

2.5 lb Raw chicken drumsticks or thighs, with bone (with or without skin)


Directions:
Preheat oven to 350 degrees.

Combine salad dressing or mayonnaise and mustard in a bowl.

In another bowl, combine Parmesan cheese, bread crumbs and pepper.

Using a pastry brush, coat chicken with the mayonnaise mixture.

Dredge chicken in the crumb mixture. Place chicken on two 13"x 9" pans which have been lightly coated with cooking spray or oil.

Bake at 350 degrees for 25 minutes.

Remove chicken from bone.
