Fish Croquettes

This is a variation on fish sticks that includes yummy veggies and can be made in a jiffy with a can of tuna.

Ingredients:

  • 3 boiled mashed potatoes
  • 1/2 C. Grated Zucchini
  • 1/2 C. Grated Carrot
  • 1/2 C. Grated Cheese
  • 2 eggs
  • can or tuna or salmon
  • 1/4 C. Flour
  • 2 Tbsp Olive Oi

Preparation:

One option is to boil the carrots and zucchini with the potatoes then mash them together, so all the ingredients are soft.  This option may be better for younger eaters.  If you carrots and zucchini in raw they make the croquettes crunchier.

Mix all ingredients together in a bowl.  Shape into sticks 1/2 inch thick by 3 inches long or form into 1/2 thick patties.  If you want to get fancy you can try to pat them into fish shapes. Roll in flour and shake off excess.

Heat oil in pan and cook croquettes until golden brown and heated through.
